Hey, everyone! I am SO excited! No, it’s not a book or a character this time around that’s got me all “hyped”—but, of all things, a RECIPE. Now, hear me out, and I think you’ll be just as happy to get this on your kitchen table as I was.
Y’all know, my “recipe” for a great RECIPE is that it has to be two things: EASY AND GOOD. This takes the cake for both of those things, and also, I was able to make about 3 meals from it. Now if hubby had not been sick, he’d have helped me and it wouldn’t have lasted even that long! I DID have to purchase three items I don’t use that much when I cook (bouillon cubes, cornstarch, and soy sauce), but that’s okay, because I’ll be making it again.
I simplified this even more by buying beef fajita strips already cut (they were perfect!) and I did add about 4 small sweet colored peppers that I already had in the fridge—you know the ones, yellow, green, red, orange, and much smaller than the bell peppers—they added some pretty color! Our Sam’s store carries a brand of spices that makes a blend of salt, pepper, and garlic—that’s what I used on the beef strips.
Don’t be concerned if the beef bouillon cube doesn’t completely dissolve. I stirred in the cornstarch when it was about half dissolved and heated the entire mixture (water, bouillon, cornstarch) up again in the microwave for about 30 seconds, and broke it up at that point.
I can’t say enough how easy this was and how GOOD. I served it over some rice, and ate a small salad with it the first night—and the 2nd time I ate it I made corn on the cob to go with it. There are lots of other things you can serve with it—I was sure wishing I’d bought some rolls! LOL
Look at this scrumptious feast! All cooked up in one big ol’ crock pot and ready to eat with very little tending once it’s all assembled. This is definitely going to be one of my “go-to” recipes, summer or winter, now that I’ve made it!
Here’s the recipe, and I sure hope you enjoy it. I was thinking, you could probably serve it over noodles, too, if rice is not up your alley. I cooked it for 4 hours on high in my crockpot and the meat was so tender, and everything blended great.
PEPPER STEAK IN A CROCK POT
INGREDIENTS
2 pounds beef sirloin, cut into 2 inch strips
¾ teaspoon garlic powder, or to taste
3 tablespoons vegetable oil
1 cube beef bouillon
¼ cup hot water
1 tablespoon cornstarch
½ cup chopped onion
2 large green bell peppers, roughly chopped
1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt
DIRECTIONS
Sprinkle beef sirloin strips with garlic powder. Heat vegetable oil in a large skillet over medium heat and sear beef strips, about 5 minutes per side. Transfer to a slow cooker.
Mix bouillon cube with hot water in a separate container until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with beef strips. Stir in onion, green peppers, stewed tomatoes, soy sauce, sugar, and salt.
Cover, and cook on High for 3 to 4 hours, or on Low for 6 to 8 hours.

I love crockpot recipes but have had to come up with substitutions for nightshades (those peppers are in this category) since learning they turn on my arthritis. Thanks for sharing!
Oh, gosh, Mary! I think tomatoes are, too, and I don’t know what I’d do if I had to give up tomatoes. I love those better than chocolate! Do you know of any substitutions for peppers for recipes like this? My son already has rheumatoid arthritis (in his 30’s) and loves to cook and I could use some suggestions!
I love crockpot hamburgers – slice a large onion in 1/2 inch slices (think onion rings) divide them and place in bottom of lined crockpot – wash 3 potatoes and slice them 1/3 inch thick and place them with the onions, add baby carrots – place 3-4 hamburgers (fresh or frozen) next – sprinkle with onion soup mix and brown gravy mix, keep layering and cover all with a box of beef broth and a couple splashes of worchestershire sauce – cook -3-4 hours on high or 6-8 on low – it really is so good – I do skim the fat off the top before serving depending on fat content of burgers!

Trudy, you’re like me–I love those easy recipes that taste like you’ve spent hours making them! LOL I never thought of substituting tomato sauce–I usually don’t keep many cans of stewed tomatoes, but I had one and I used it. I love tomatoes in any form! LOL

Yeah, I had some of those fajita strips in my freezer so that came in handy, and the peppers–seems like I always have to buy those when I make a recipe with them because they don’t keep very long. Sounds delicious and even though I’m widowed and eat alone, think I’ll fix it and freeze part of it. I’m wondering if, as part of the spice, using a garlic-maple salt that Sam’s has. It’s delicious on several things. You would want to cut back on the garlic powder, but that touch of maple can add a little different touch.
Ginni, I bet it would freeze just fine! You might want to try it as the recipe calls for first and then if you make it again, try the maple–this recipe calls for a tiny bit of sugar. I bet that maple would be good, though!

We have a casserole our kids love and have made it for probably 40 years. Cook pasta of choice (I use a box of rigatoni), add a jar of spaghetti sauce, cubed mozzarella (8 on. block), cubed pepperoni. Mix together, put in a greased baking dish (bowl or 9×13, bake at 350 until bubbly. Top with shredded mozzarella and bake until melted and browned. I don’t measure much, I just throw together as much as I need for the size group I’m feeding. This a favorite for pot luck dinners because it is easy and you can vary the amount of cubed cheese and meat you use.
OHHHH, Patricia! I love the sound of this! I usually do have pepperoni, but the slices. I will have to buy some of the sticks now, and keep those on hand, as well. I need some really good, easy recipes. This sounds like one my husband would like, too!
I have a favorite from when I was first married and money was tight: Peel and cube white potatoes. Cut carrots into similar sized pieces, green beans or frozen peas. Place in casserole dish. Make roux using equal amounts butter and flour. Do not brown just melt together then add milk. 3 to 5 times the butter & flour. Heat until thickens to make a white sauce. Add salt & pepper, onion powder to taste. Pour white sauce over vegetables and bake for an hour at 350 degrees. top will brown and it is done when carrots & potatoes are soft. I love this and can be done ahead in afternoon before kids got home. Then put in oven before dinner while we did homework. We always ate at 6 pm as a family so kids knew when to be home – and they brought their friends as well. Great memories now that I’m 77. Lots of love to all
Susan, this sounds really, really wonderful. I would probably use the peas, since I’m not a huge green bean fan, but I do love peas, and so does my husband. This would be great with so many dishes I can think of! Very versatile! Thanks for this!
