Cowgirls in the Kitchen – Karen Witemeyer

With Thanksgiving coming around the corner, I thought I’d share one of my favorite Thanksgiving recipes–Candied Yams. This is a tradition handed down from my grandma to my mom to me. They aren’t exactly quick, but there are only three ingredients, so they are pretty easy, and absolutely delicious!

Candied Yams

Unfortunately, I don’t have a picture of my mom’s yams, but this one came the closest. They won’t be syrupy, though. Just buttery and candied around the edges.
  • 5 large red garnet yams
  • brown sugar
  • 2 sticks butter, melted

(Red Garnet Yams taste better than sweet potatoes, in my opinion, but if you can’t find them, sweet potatoes will work just fine.)

Wrap yams in foil (poke a few vent holes with a short knife in each) and bake in a 400 degree oven until soft (about 1 to 1 1/2 hours). Let cool.

Unwrap yams, remove skin, and slice lengthwise into thin, oblong strips about 1/4 inch thick. Lay flat in a shallow baking dish (jelly roll pans work great), fitting them close together so almost no pan is visible. You will probably need at least 2 pans. Sprinkle generously with brown sugar. Drizzle (or spoon) melted butter over the yams until all the sugar is moistened. Bake in a 400 degree oven again until yams get dark (sticky and candied) around edges (usually 45-60 minutes).

Use a metal spatula to remove yams. Serve in a shallow dish.

Old-fashioned. Simple. And delicious!

What is your favorite potato dish?

  1. Potato salad (and use a bit of mustard in the dressing) is but since I’ve discovered that nightshades (white potatoes, tomatoes, and green/chili peppers) turn on my arthritis, I no longer eat this dish.

  2. I love a sweet potato casserole (brown sugar, pineapple juice,,cinnamon, nutmeg, and of course tiny marshmallows on top).
I also enjoy a loaded mashed potato casserole (Sour cream, butter, bacon and cheddar cheese). I haven’t really found a way I don’t like potatoes.
Thanks for sharing your recipe, will definitely try it.

  3. My mother made the best candied sweet potatoes, cooked in a pot on top of the stove and used regular sugar, butter and vanilla. They were delicious. My family prefers sweet potato casserole so I no longer make them. Never could make them as good as Mother’s. lol

    Yours sound good too.

  4. My mouth started watering when I saw the picture. 🙂 I like sweet potatoes a lot and try to keep a couple in the refrigerator ready to eat.

  5. Love, love, love potatoes. Two of my favorites are Mom’s potato salad and Grandmothers Potatoe Kugelis. A delicious Lithuanian potato pudding type dish with potatoes, salt pork and onions. Lot’s of work but delish!

  6. There’s a recipe that my late sister-in-law used to always make for the holidays that’s similar to the Cracker Barrel Hashbrown Casserole. I always call it cheesy potatoes. She gave me the recipe and I’ve made it several times, but it doesn’t taste as good as hers did.

  7. All the years in which I had absolutely no use for sweet potatoes! In the past 2-3 years I have learned to love sweet potatoes. Ours are baked in the microwave and doused with butter, maple syrup and cinnamon. Now I would gladly eat the sweet potato casserole, or the candied yams.

  8. Good afternoon, your mom sweet potato recipe sounds delicious! My mom mad some really good ones also, with butter and brown sugar and cinnamon. I love sweet potatoes and my husband makes them also really good from my mom’s recipe and he also just sticks them in the micro wave cut them in half and they come out delicious just as they are. He also puts them on the grill .

  9. I Love sweet potatoes we have these every year for our Thanksgiving and Christmas dinners! Thank you for sharing!

  10. Karen, Your recipe sounds scrumptious. I love sweet potato casserole with a caramelized pecan topping. Sweet potato fries are also yum!

  11. Hi Karen, I LOVE, all kind of potatoes… Thinking, I need to cut back on some, but; that’s a hard thing to do when your a farm lady with lots of recipes for them & everyone enjoys eating them.

  12. This sounds sooo good. I love sweet potatoes and yams. I usually just eat them with butter and salt & pepper, but can’t resist brown sugar and butter. Will be trying this recipe soon.
