Howdy!

I love to bake and often experiment with ideas to come up with new cookie recipes. Or try out unusual ingredients.

Root beer is a well-liked flavor at our house, so when I saw a recipe for Root Beer Cookies, I knew I had to give them a whirl!

Root Beer Cookies

1 cup packed brown sugar

½ cup butter

1 egg

¼ cup buttermilk

2 teaspoon root beer extract (or concentrate)

1 ¾ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

Preheat oven to 375?.

In a mixing bowl, cream butter and brown sugar. Add egg, beating well. Beat in buttermilk and root beer extract.

Combine flour, baking soda, and salt. Gradually add to creamed mixture.

Drop by tablespoonfuls onto ungreased baking sheets. (I like to line mine with parchment.)

Bake for 10-12 minutes or until lightly browned.

Remove to wire racks to cool.

Root Beer Frosting

1 1/2 cups powdered sugar

1/4 cup butter (softened)

1 tablespoon root beer extract

Mix powdered sugar with softened butter, and root beer concentrate.

Frost cookies.

Store in airtight container up to five days.

Yield: approx. 24 cookies

NOTE: You can cut back the root beer extract to 1 teaspoon. We like ours with extra “pop!”

  1. Those cookies sound delicious.

    I’ve put coca cola in chocolate cake and some other sodas with a cake mix. I’ve used lemon lime soda in place of beer in beer bread.

  2. I actually haven’t though I’ve seen recipes for cakes with sodas in the mix. I personally am not a fan of root beer soda, I find it very sweet for my liking.

  3. yes used sprite in dump cakes – have seen orange and grape also used in same situation – we both love root beer too!

  4. Good morning, Shanna. Your root beer cookies sound delicious! Yes – I have used Coke in something, but I do not remember what it was. I also used Sprite of Seven-up in fruit/gelatin salads. It gives a wonderful fizz and a different taste which is delightful. Have a blessed day.

  5. I made a Coca Cola cake once. It was amazing! I’ve seen a recipe where you just use a cake mix and a can of soda, and it’s supposed to be really good, but I haven’t tried it yet.

  7. My husband and kids love root beer, me? not so much. lol My husband used to buy Root Beer Extract and dry ice and make his own root beer. Will have to make your cookies for them. Thanks for the recipe.

  8. No, I haven’t baked with soda pop. Reading books set in the South, I’ve seen Co’Cola cake mentioned.

    The Root Beer cookies sound interesting. I like root beer but have never seen it sold as an extract.

  9. The frosting looks pretty! ‘Frost cookies’ doesn’t cover it for me because nothing I’ve ever frosted looked liked that.

    I’ve used different sodas in place of eggs and the liquid while making a cake.

  11. Our family loves root beer, so I will definitely have to give these a try. Like you, there will be no cutting back on the amount of flavoring. I didn’t realize it was available. I’ll have to find it. I have used ginger ale and 7-up in marinades for meats, but not to bake. I did make the chocolate cake using Coca Cola.

  12. Oh my goodness, if I’d have had this recipe I would have made it for my youngest son! He loved root beer! I still might make these just to try them!
    I’ve made the Coke Cake, and beer bread. I want to make the 7-Up biscuits.
    I always enjoy the recipes at the end of your books.

  13. Thanks for the recipe, the cookies looks delicious. And I definitely never used soda for cooking although I have heard about beer in recipes. I now need to Google for soda recipes.
